Vegan Pancake Cereal

Aren’t you digging Cereal with Milk? Try Pancake Cereal with Milk instead.

Have you seen the lastest food trend on instagram? I'm talking about pancake cereal yes! Mini pancakes being served in a big bowl with optional milk, syrup or butter. YUM?!! I was just as excited when hearing about this food trend as I assume you might be reading this, so I just had to take the time today to test it out!

So how do you make pancake cereals? 

Well, you basically just need to make mini pancakes. Most pancake recipes work when making this, but I recommend using a recipe which gives you fluffy (American) pancakes. There after just fry them small sized and serve in a bowl.

My recipe is vegan and I have served them with both organic oat milk and agave syrup.

As I wrote previously, you can do optional recipe but I made this one:

Vegan Pancake Cereal

INGREDIENTS:

1 ripped banana (approx 120 g)

3/4 dl (30 g) gf, fiber or ordinary rolled oats

2 tbsp plain wheat flour, buckwheat flour or gluten free flour

2 dl (200 ml) plant based milk

1 tsp baking powder

a pinch of salt


HOW TO MAKE:

  • Mix everything together in a blender or using a stick blender.

  • Heat a frying pan with optional cooking fat and fry small mini pancakes. Since the pancakes are small they get burned quickly, so be cautious. 

  • Keep frying the pancakes until all of the batter is done. Serve in a bowl with plant based milk and agave syrup or vegan butter and syrup.
